 Happy weekend everyone!
I talked to my aunt the other day and she gave me a recipe for a zucchini-feta tarte. As I was nowhere near a pen while speaking to her on the phone, I tried to memorize what and how much if it should go in the tarte. It was a hot day, I was lacking coffee and to be honest, I just remembered that it sounded delicious. So I mixed together what I thought she said and it turned out really tasty! Thought I share it with you guys, as we all love quick and easy recipes in summer...

Here is what I mixed together:
- 1 middle-sized zucchini (rasped)
- 1 egg
- 3 tbsp yoghurt
- 4 tbsp crumbled feta
- 5 tbsp all purpose wheat
- 1 tbsp caraway
- 1 tsp salt
- 1 tsp grounded pepper
- 1 tsp grounded garlic

For the tomato salsa:
- 4 small tomatoes (finely chopped)
- 1/2 onion (finely chopped)
- juice of 1/2 lemon
- 1 tbsp olive oil
- some basil
- season with salt, pepper, grounded garlic

I preheated the oven to 180°C (357°F), then kneaded all the ingredients for the tarte together. I placed the dough into my springform tin, but I believe you could use any sort of pan/ casserole. I let the tarte bake in the oven for about 40 minutes, until the top started to get brown and crispy.
For the tomato salsa, I whisked everything together in a bowl and let it marinate in the fridge until the tarte was ready. 

Wow, this was the shortest recipe ever. I think you could vary this tarte with all sorts of vegetables and cheese, ham would maybe also taste very good! What ingredients would you decide upon?
