Brrrr.... rain, wind and only 11°C in Vienna. Yesterday had 'warm soup!' written all over it. 
I decided to make a leek cream soup with potatoes and homemade croutons. It's one of my mother's recipes and we just love it.

- leek
- 3 middle sized potatoes
- 1 tbsp vegetable oil
- 250ml sour cream
- ~1l water
- soup seasoning
- pepper
- caraway

- 2 slices brown bread
- 1tsp vegetable oil
- salt

Wash the leek and cut it into fine rings. Peel the potatoes and slice them into small cubes. Heat up a pot with the vegetable oil, then pour leek and potatoes into it, roasting everything for about 3 minutes. Add the water. When the soup is boiling, add the soup seasoning (I always use a organic-vegetable seasoing). Let the soup boil for 5 minutes, then reduce heat and mix in the sour cream, caraway and pepper.

While the soup is filling the air with its delicious scent, preheat your oven to 150°C (302°F) spread a little bit of oil onto the bread slices (this was kind of a heureka moment for me. I don't know why I never thought of pouring oil on the bread BEFORE cutting it into small pieces....), sprinkle salt over them and cut them into small cubes. 

Put baking paper on a cooking grate and place the bread cubes on top. Let them roast in the oven until crunchy.
