Happy Friday to us all!
First of all: I apologize for only offering a total of 2 pictures for this recipe. We have nothing but rain and clouds and gloomy light - I tried my best, believe me. However, the chocolate coconut cake is totally yummy, I hope this compensates the lack of pictures!
It is a quick recipe and you can easily deep freeze the cake for other occasions.

You'll need:
- 4 eggs
- 100g butter, room temperature
- 90g sugar
- 250g semi sweet chocolate
- 200g coconut flakes
- 80g all purpose flour
- butter + breadcrumbs for the baking tray

Butter your baking pan and pour some breadcrumbs onto it, until the whole pan is covered. You could also use baking paper, but the cake might stick to the paper. Preheat your oven to 180°C.

Seperate the egg whites and beat them until stiff. In another bowl mix together egg yolks, sugar and butter. Then whisk the coconut flakes into the mixture. As this is a quick recipe, put the chocolate in a bowl and into your microwave (or melt it in a double boiler), medium heat, for about 4 minutes. Put the melted chocolate to the the mixture. At last, fold in the beaten egg whites and spread the dough onto the baking pan.

Let the cake bake for approximately 30 minutes.

My whole kitchen smells of warm chocolate and the sweet scent of coconut.... mmmmhhhh. Perfect for a rainy Friday evening.
