Hello spring! Hello warm weather! Hello strawberries!
Normally I'm careful to only buy seasonal, locally grown fruits and vegetables (I just don't see the sense in buying chive from Chile or cherries in February) but every now and then something winks at me from the shelf and I just can't resist.
As the temperatures are climbing I was longing for a summery fruit dessert and came up with this strawberry & cream cake. 

For this heavenly dessert you'll need:
  • 100g sugar (1/2 cup)
  • 2 eggs
  • 120g all purpose flour (~ 1 1/3 cup)
  • 80g butter (1/3 cup)
  • 2tsp baking powder
  • 200ml yoghurt (1 cup)
  • 200ml cream (~ 1 cup)
  • 200g curd (~ 1cup)
  • 50g sugar (~ 1/3 cup)
  • 1 lemon
+ about 400g (1 3/4 cup) strawberries (depending on the sweetness of your strawberries you might also need some powdered sugar)

Seperate the eggs and beat the eggwhites until stiff. In another bowl mix sugar, egg yolks and butter until fluffy, then add flour, baking powder and yoghurt. Butter your cake pan (I used a box type) and bake the cake for approximately 25 min at 180°C (356°F).

2) For the cream, whisk all ingredients together until smooth and place it in your refrigerator.

3) Slice the strawberries and pour some powdered sugar over them (downside of buying fruits out of season!). Set some strawberries aside for decoration.

4) When the cake is ready let it cool for a couple of minutes and then cut it in half. Coat the underpart with cream, place strawberry slices on top and add another layer of cream. Piece the cake together again and fully coat it with the remaining cream

5)  Decorate the cake with the rest of the strawberries. Yummy!!
