Welcome to our fourth weekend recipe! We chose a vegetarian quiche this week and hope you'll like it. Quiche is just such a versatile dish! I've made quiche with all sorts of vegetables, with ham and even salmon. You can eat it warm on a cold winters day, or cold with salat on a summer night. For our quiche we combined carrots, spinach and leek with creamy feta yummy!!

  • shortcrust
  • 250ml cream (ca. 1 cup)
  • 3 eggs
  • 3 middle-sized carrots
  • 100g leek (1 cup)
  • 200g fresh spinach (2 cups)
  • 150g feta cheese (1 1/3cup)
  • salt
  • pepper
  • 1tsp majoram 
Preheat your oven to 180°C (356°F). Line your baking pan with parchment paper and put the shortcrust into the pan. Slice the carrots and leek and drape them on the shortcrust. In a bowl, mix cream and eggs, salt, pepper, majoram and sliced feta cheese. 

Add the fresh spinach and pour everything into the pan. Let the quiche bake in the oven for approximately 50 min. 
When you take your quiche from the oven, let it cool off and settle for a couple of minutes. That way it is easier to cut slices and you won't burn your tongue ;-)
